Brunch a bunch

The best meal of the day is the one that usually only exists on the weekends.

I made these easy frittatas yesterday for a very late brunch and the whole family loved them! I'm not exactly the greatest cook, so it's always an accomplishment when I nail something besides easy-bake cookies.

Preheat your oven to 350 degrees. Then, you'll need:
8 eggs
1 cup of milk
1 cup of finely shredded cheddar cheese
1/4 of an onion
1 large white mushroom
Salt & pepper to taste

And some pretty flowers :)

Start by whisking the eggs and the milk together in a medium-size bowl. Add some salt and pepper, then fold in your chopped up veggies. You can add different ones or more or less of them depending on what you have around the house.

Pour the mixture into a greased muffin pan, and let it cook for about 25 minutes, or until the egg comes out clean.

After that, pour a tiny bit of cheese on top of each "muffin" and put it back in the oven for 3-4 minutes, or until it melts.

Take the frittatas out of the oven and let them cool down for 5-10 minutes. In the meantime, snap a few pics of a really dirty oven mitt and some cute shorts you bought recently.

This makes about 12 medium-size "muffins." Serve with some fruit and a mimosa, or freeze and enjoy throughout the week. Happy brunching!
